90s Grunge Dark Chocolate Coconut Pancakes
This Saturday we are channelling the likes of Nirvana, Pearl Jam and a little STP for inspiration while we throw in some shredded coconut and dark chocolate for our Morning Pancake Dance Party/90s Grunge Fest.
Hip Hop Carmel Apple Pancakes!!
This Saturday, we're going to be bustin' it to the sounds of Rihanna, Pit Bull, Kanye, Lil Wayne and more while making our Carmel Apple Pancakes (only clean versions of course, we got kiddies up in here!)
I am going to go Gluten-Free again as I LOVED the results from the King Arthur's Gluten Free Pancake mix last week. I will switch it up by carmelizing a few apple slices first and putting those into the batter along with a little vanilla extract and some yummy fall type spices like cinnamon, clove, and nutmeg. I believe I'll whip up some homemade carmel type syrup with walnuts to go on top.....yum!! Happy Dancing!
This is for those of you who sent me texts wanting more specific info: This is the one day I let my kids eat sugar for breakfast so be prepared! LOL
1 Large Honey Crisp Apple peeled, cored and sliced (I put mine through an apple slicer, peeled the slices then sliced them into thinner slices and quarter them)
1 Tbs butter
1 Tbs Brown sugar
1 1/2 tsp Apple Pie Spice
In a skillet on med-heat melt butter, add apples, sugar and pie spice saute until apples are soft. Transfer into a bowl and set aside.
Prepare 1 box King Arthur's Gluten free pankcake mix (Kodiak mix or your favorite pancake mix if you don't dig the Gluten Free flavor) according to directions. (I used 1 3/4 c. Almond milk and butter instead of oil)
1 tsp vanilla
when mixed well, stir in sauteed apples
batter is ready for your grill!
(We topped with carmel syrup: 4 Tbs butter, 1 c. brown sugar, melted together in a saucepan on med heat once it starts to boil add 1/2 c. water stir until well combined)
